I just made this, and am eating it now. It turned out awesome, tender and
moist, and flavorful. It made enough for a couple meals, which is great
because I am trying to save some money by eating beans and rice a couple
times a week. Thanks for sharing both the recipe and your sweet
grandmother!
Great recipe! I have a question.. Have you got family from Spain? You did
the rice almost same that here in Spain.. Excuse me for my bad English, I´m
from Spain, and I want to tell you that you did very well the rice,

just for reference this is Mexican rice Spanish rice usually refers to
puerto Rican some coming which is pretty different

You’re so welcome, Betty — I’m thrilled to be “on your show!” I also check
my rice around 15 minutes or so but I don’t raise the lid. Since the lid is
glass, I just lift the pot by the handle with one hand and hold the lid
tight with the other. Then I tip the pan on it’s side just enough that I
can see if any liquid rolls out from the edge of the rice. If I don’t see
any, I know it’s done.

I have been trying to get a cookbook, but everytime I go to Lulu.com and
type in bettyskitchen, nothing comes up.. is there another way to spell it
or something, because I would love a cookbook. I am Caucasian and my
husband is Mexican. It was always hard for me to cook him food. I am a good
cook; but i’m just used to making foods my mother taught me, not mexican
foods, but I would love to please him by making some. Thank you very much;

THANK YOU! Excellent video. I’ve been searching Mexican rice recipes ALL
day long, and this is the first I’ve seen to be the easiest, best
explained, and haven’t tried it yet, but probably the most flavorful
because of using your favorite salsa. LOVE that idea. Been struggling with
this for a long time. Thanks again for my resolution. God Bless : )
I made this last night before bed so we could have it tonight for supper
(hopefully it reheats OK). I subbed most of the water with chicken broth
and used basmati rice. I think it is a really flavourful recipe. Thanks!

I do have a few steaks in bettyskitchen. Just search for grilled steak. I
will be doing more outdoor grilling this summer. –Betty
