I tried this last night. For comparison, I left two thighs uncut and
couldn’t tell the difference with the cut-up thighs. It was pretty good but
a little weak on the “hawtness” part. So I’m going to triple the “hawtness”
next timel

hey Laura, could I use chicken thighs instead of legs?
I used 2drum sticks, 2thighs, 2wings… and… 2 (1/2) breasts… bigger
glass pan, more potato’s, same temp 450 and went 65 minutes to make sure
the breasts were cooked and yes, they were perfect! – The DS & thighs were
also perfect… the meat just fell off the bone and OMG juicy… even the
breasts were a delightful moist. And the garlic ? just fabulous, the GF
loved it too… she thinks I really know how to cook hahhahaa, imagine
THAT…!

i made a variation of this last week… i marinated chicken thighs and
drumsticks in a combination of teriyaki and sesame-ginger marinades
overnight, then par-baked some potatoes before cutting them in bite-size
pieces. then i added the potatoes to the marinated chicken and tossed them
in the marinade. next, i sprinkled a small package of diced apples with
juice (toddler finger food) over the chicken, then added some apple juice.
covered the pan and baked for 30 minutes, uncovered and continued to bake
for another 15 minutes to just crisp the chicken and potatoes. (i don’t
like really crispy) then i served it with a combination of steamed
broccoli, cauliflower and carrots. it was sooo so yummy!

I have a question if i want to make this with 4 chicken breast instead do i
leave it in the oven more or less time? and how will i know when the the
chicken breast is fully cooked ?
Yes It was very good. I’m sad I didn’t have any lemons because I know it
would have been so much better! But this will be a new dish to add to all
the other meals I make! Thank you like always!

I made this the other day and just so happened to come across this on your
page tonight— I had slight variations, but I use chicken breasts, and
they are juicy, and tender, and I don’t do much different. Obviously you
cook the potatoes longer, and put the chicken in later, you should do that
with any piece of chicken. I withheld salt, because i used worscershire
sauce and soy sauce on chicken, with cilantro flakes and oregano, with
garlic gloves thrown in also. delicious. i used red potatoes, and 2 regular
potatoes, and some pepper, with a splash of sweet vermouth.
I will make this the chicken breast but follow your instructions and add
the chicken 30 after the potatoes are in the oven so the poultry won’t get
dried out
