Most reliable is a meat thermometer. However, you don’t need one with
practice. Pay attention to how the meat firms up when cooked. With practice
you can learn what cooked vs uncooked feels like.

You should the fridge for anything longer than say 20 minutes. But before
cooking, allow the chicken to come up to room temp.
Can you let the chicken marinade inside the fridge, or does it have to be

great recipe. I had to use Muenster cheese slices and Turkey Bacon though
because that’s what I had in the house.

maybe a little of both, that technique to roll it up and leave it in the
fridge, so it can cook like a block is very clever, in going to surprise
