Yesssss; finally someone that does it w/o lettuce. It get so soggy when you
add lettuce and honestly it brings nothing to the table in terms of taste
if you’re using a lot of cucumbers. This is almost exactly how I make Greek
salad at home, except I don’t use quite so many olives because I’m not a
huge fan. Also I use pepperoncinis and yellow and orange bell pepper for
color (and taste because both those ingredients are delicious!) I’ll have
to try your dressing recipe!

I agree with your statement about the feta cheese. My ideal greek salad is
probably a bowl of feta cheese mixed with the greek dressing and like 1 or
2 pieces of vegetable in it =D Jk, but feta cheese does indeed rule —

I just got the mild banana peppers in a jar and chopped them up. I am sure
you could use the yellow chile peppers that you use in salsa and it would
work fine.

You can use whatever is your favorite vegetable. Zucchini would be great in
this salad.
