What do you do with the leftover oil from the tuna? Can you use it to fry

Just curious, why would you drain the olive oil away from the tuna, and
then add back more olive oil? Why not just drain some of the olive oil away
and leave the amount you want remaining? Great video.. thanks for the
recipe! I would never have thought to use Arborio rice in a rice salad
(even though I’ve never made a rice salad, just eaten it), and I love
Arborio rice! (just used to having it in risotto). Thanks again.
