travel ch3f cooks CHICKEN TOCINO | Pang Negosyo Recipes


Good Day everyone! We are here once again on our channel. Today, we are going to cook FIlipino breakfast. This is Chicken Tocino. These are our ingredients… 1/8 cup Pineapple Juice, 3 tbsp. brown sugar, 1 tsp. salt, 1/8 tsp. black pepper, 1/8 tsp. garlic (minced), 1/8 tsp. annatto powder, 1 pc. bayleaf, 200 grams chicken, water, and oil Put all the dry ingredients in a bowl. Then add the pineapple juice. I’m using unsweetened pineapple juice. But you can also use sweetened one, but make sure to adjust the amount of brown sugar. Aside from this, if you want a brighter color of the tocino, you can add additional annatto powder. Dissolve it properly. Add the bayleaf. Now, mix in the chicken. I’m using chicken breast. Marinate this overnight or if not possible, at least four hours. Mix it thoroughly so that the marinade will evenly be absorbed by the chicken. Press it firmly. Cover it before storing inside the refrigerator. Put the chicken in a pan. If you have noticed, the chicken turned dry. This only means that the marinade was fully absorbed by the chicken. Put 1 cup of water into the pan. When cooking tocino, I make sure to cook it first with water until tender before frying it. Spread out the chicken to cook it evenly. Chicken tocino is my favorite because it’s more healthy than pork tocino since we are using chicken breast. In case that you are using other parts of the chicken or you are using pork, make sure to add more water. These require longer time to cook. Let’s turn all the chicken pieces to evenly cook it. Cook it until dry. Put oil to fry. Carefully mix the chicken to avoid breaking it into pieces. I will recommend that you use tongs to turn each piece easily. Many people believe that the best part of the tocino is if the sides turned almost burnt. That’s the time that the sweetness of the chicken comes out.
