SFSP Meal Service Types

the Summer Food Service Program has its own meal pattern and meal service styles this training is going to review meal service styles there are two types for most sponsors serve only and offer versus serve there are pros and cons for both it's up to you to decide which to offer serve only is easier meal service for the site staff but it has the potential to increase waste a share table is one way to reduce the waste it allows children to place unwanted items they must take on a table other children can choose to take and eat items from that table another option is to use offer versus serve which is available to all you must have a plan regarding how you will monitor if you choose to follow offer versus serve you must train your point of service person so they can correctly identify a reimbursable meal for offer versus serve it is important to understand the difference between a component and an item please review this slide for more information while the magic number is three for offer versus serve at breakfast it is three items at lunch or supper it is three components regardless of whether it is items or components they must be three different items or components ok let's do some practicing of offer versus serve at breakfast here is the planned menu that you offer it has 1 cup of milk 1 ounce equivalent of cereal 1 ounce equivalent of toast and half a cup of fruit you are also offering an additional fruit item an apple to give the kid more options how many components does it have three components how many items does it have there are five items but only four different items the Apple and the applesauce are considered the same item is this a reimbursable planned offering yes the first child comes through the line and the point of service counter has to decide if this meal is reimbursable how many components are on this tray two components how many different items are on this tray three different items is this meal reimbursable yes the next child comes through the line and the point of service counter has to decide if this meal is reimbursable how many components are on this tray two components how many different items are on this tray two different items is this meal reimbursable no apples and applesauce are considered the same item just like oranges and orange juice okay let's do some more practicing of offer versus serve at breakfast regardless of whether the child will be placing the food on a tray or in a bag both need to begin as empty the child decides what to put on the tray or in the bag here's the plan menu that you offer it has one cup of milk a mini bagel that is one ounce equivalent of grain yogurt that is one ounce equivalent of meat/meat alternate and one-half cup of fruit what do we remember about meat/meat alternates at breakfast they are not required so don't count but wait for offer versus serve at breakfast you have to offer a fourth item a meat/meat alternate can be that fourth item how many components does this meal have three components how many items does this meal have four items and they're all different items is this a reimbursable planned offering yes the next child comes through the line and the point of service counter has to decide if this meal is reimbursable how many components did the child take three components how many different items did the child take three different items is this meal reimbursable yes it is your choice on whether you decide to employ serve only or offer versus serve at breakfast but offer versus serve will cost a bit more at breakfast as it requires you to add an additional item to the plan menu the tray on the left is your plan breakfast without offer versus serve the tray on the right is your plan breakfast with offer versus serve okay let's do some practicing of offer versus serve at lunch regardless of whether the child will be placing the food on a tray or in a bag both need to begin as empty the child decides what to put on the tray or in the bag here is the planned menu that you offer it has a hamburger with bun 1/2 cup steamed broccoli 1/2 cup fresh oranges and milk how many components does this meal have four components how many items does this meal have six items five of the items are different items the bun is two items is this a reimbursable planned offering yes the first child comes through the line and the point of service counter has to decide if this meal is reimbursable how many components did the child take three components how many different components did the child take three different components is this meal reimbursable yes the next child comes through the line and the point of service counter has to decide if this meal is reimbursable how many components did the child take four components how many different components did the child take four different components is this meal reimbursable yes the next child comes through the line and the point of service counter has to decide if this meal is reimbursable how many components did the child take three components how many different components did the child take three different components is this meal reimbursable yes the next child comes through the line and the point of service counter has to decide if this meal is reimbursable how many components did the child take three components how many different components did the child take
