It is also good, if you instead of dijon put some curry, and instead of
spring onions some cress. I will try this one, looks good.

yummm i never thought of adding green onions.. and i think that is what
makes it the best! very good although i was out of garlic :/ but still
really good! i put mine on a toasted bagel, with lettuce and tomato!

@DonRJave If you like egg salad, just reduce the mayo from 1/3 of a cup to
maybe 1/4 cup or less? Give it a try and share your experience with us.
