Chinese sausage fried rice – how to prepare in 20 minutes

tasteasianfood.com Today I want to show you how to prepare Chinese sausage
fried rice. Chinese sausage is a food an item that is very commonly used you in
Chinese New Year season like now or even during the normal day. Chinese
sausage is perfect for fried rice because of the oil that renders, and also
is savory flavor. Today I want to show you how to prepare it by just using
a few simple ingredients: the sausage and scallion, some eggs, and some seasonings.
But you can always switch it up by adding squids, some meat, shrimps, some
green peas and so on or anything left over in your refrigerator. So today I
want to make it simple and show you the exact step-by-step method. Please follow
me and I’ll show you how to do it. First let’s prepare the rice. Overnight rice is
the best, but if you only have fresh rice, spread it out on the tray and cool it
under the fan, and break up the lumps before you fried it. Next, put the Chinese
sausage in hot water to loosen up the casing, and remove it. Fried the sausage with low heat to
render the oil which we will use it to fry the rice. Next, this is an optional step. I’m making
some shallot oil by deep-frying the shallots until it is crispy. The oil can be
used to fry rice to add flavor, and the crispy shallots as a garnish. Once we get everything ready we can
start to fry the rice. Coat the rice with the egg liquid and fry over low
heat until the egg is cooked. Alternatively, you can scramble the egg first. Season with like soy sauce, salt, and
pepper. Now it comes to the final part of stir frying. Turn to the highest heat you
can and stir fry the rice until aromatic. Garnish with chopped scallion and the
crispy shallots. That’s how I make my Chinese sausage fried rice, and I hope
