Nalini Ki Rasoi Today im going to make a classic
Indian delicacy – Chicken Biryani Dont forget to click on the

my upcoming and new recipes Lets see the ingredients required for protien
and carbohydrate rich Chicken Biryani 350 grams of basmati rice 1/2 kg chicken on bones 5 onions cut in length 1 bowl coriander leaves 1 bowl mint leaves 2 tomatoes (finely chopped) 5 peeled potatoes 6 chillies chopped in length 1/2 bowl saffron milk 3 tablespoon curd 1/2 bowl clarified butter (ghee) For hot spices I have taken 10 green cardamom 6 to 7 cloves Mace 5 cinnamon sticks 5 black cardamom 4 bay leaves 10-12 black pepper 1.5 teaspoon ginger garlic paste 1/2 teaspoon caraway seeds powder Pinch of saffron 2 teaspoon kashmiri chilli powder 1/2 teaspoon turmeric powder 1 teaspoon powdered hot spices 1 teaspoon chicken biryani masala 1.5 teaspoon coriander cumin seeds powder Water (for cooking rice) Oil Salt as per taste First start with chicken marination.
Put chicken pieces in a bowl. Add ginger garlic paste Salt as per taste Kashmiri red chilli powder Turmeric powder Coriander cumin seeds powder Chicken Biryani masala Hot spices Curds Green chillies Mint leaves Coriander Mix well Cover the bowl for 20 minutes
for marination process Till chicken gets marinated cook
the rice for Biryani To cook the rice boil water in a pan Add salt as per taste Half of the hot spices – green cardamom, cloves
etc will be used for rice And the rest of the half in chicken Open green cardamom and then put in water
so that it enhances the flavor Do the same for black cardamom
and put in water Next add clarified butter (ghee) Let the water come to a boil After water gets boiled add saffron seeds Add rice which must be soaked in water
at least for half hour Semi cook the rice (around 70%) Strain the rice out of water after
semi cooking (70%) the same Next take some oil in a pan And fry the potatoes Shallow fry the potatoes till it turns brown After they turn brown remove the
potatoes from the pan Next shallow fry the onions Add salt as per taste After onions get fried remove them Next put marinated chicken in the same pan Add the remaining half of the hot spices Caraway seeds Roast chicken till it starts changing its color Next add tomatoes Potatoes Fried onions Coriander Mint leaves Add a layer of Semi (70%) cooked rice Next spread fry onions on the rice Mint leaves Coriander 1 tablespoon of clarified butter Saffron milk Hot spices Add one more layer of semi cooked rice Again spread fried onions Spread Mint leaves Spread Coriander Add clarified butter (ghee) Saffron milk Some hot spices Stick some dough on the corners
of the lid of the pan This is done to vaccum the pan so that
the flavours dont escape out Cover the pan with the lid for 15 minutes on low flame After 15 minutes keep the pan on a flat pan (tawa)
which again has to be on low flame This is done so that the Chicken Biryani
doesnt get burnt from the bottom Keep the Biryani pan on the flat pan (low
