American Food Series Episode #2, Wisconsin Dinner



hello everybody on Frida stopper and today the menu for today is based on Wisconsin and Wisconsin has a lot of dairy so today our Foods has a lot of vegetables and dairy and it does have ferger's so that is on the menu so I'm going to start with their Wisconsin broccoli salad and I'm going to show you what goes in that what goes in that is some green onions some cheddar cheese cubes some you get the other things ok so we're going to have broccoli cauliflower and you could have all nets and bacon bits and it has dried cranberries but my kids are picky so I'll put those on the side and whoever wants them can have them and whoever does not doesn't have to I have cherry infused craisins so these will be the dried cranberries I use because they're sweeter and maybe the kids were like these more all right I'm going to begin with the onions so if you want to watch me chop the vegetables do those you don't like to watch it's called broccoli salad even though it has cauliflower and broccoli so I'm going to save the whites for later for something else actually I'm going to put these in the food processor so they'll be really tiny okay these are our chopped we put them in here yes we do associate only Wisconsin with cheese because they have so many berries in Wisconsin of course there are other things in Wisconsin and what I'm kind of sticking to the stereotype I guess that state I I thought so many of us are proud of the fact that we can cook foods from various cultures and I decided that I will break from that trend for a while and and cook American food that's American from shore to shore I'm going to use each state whatever I can find on Pinterest that looks very popular from that state never looks the most popular from that state on Pinterest is what I'm going to use because because just for something to do it gives my family I have to cook anyway so I want to make it interesting for myself too and if you want to see it you can see and my kids all do you like raw broccoli except one one k prefers cooked broccoli so he might go with cauliflower cheddar cauliflower soup I'm gonna make as well there is this broccoli cauliflower salad there tritter cauliflower soup and then there's burgers and I think this has a lot of vegetables I'm not doing fries just because well fast-food restaurant that taught us that fries go with burgers they do they're amazing but I want to try different things for the sake of getting my kids to eat healthier as well and I noticed that a lot of the popular home-cooked meals are full of vegetables in American cuisine this is what ever makes it American is is the thing that that state is known for like Maine is known for blueberries and seafood Washington say is known for apples and salmon so I'm going to try to make healthy foods remind us that our cultural food is delicious and healthy and we don't have to forget it I don't want to forget it I don't want you to forget it either my kids to forget it because fast food is not American food of course we we are we think of it as American celebrities or not it's not the traditional thing it's the fast food culture it's better the fast food culture it's not necessarily on what our grandmothers and grandfathers and all of them affect thought of as American I mean broccolis done go for the cop killer and the chopped up onions are already in there so it's at half a head the other half goes into that scoot in and then I'm going to use some frozen cauliflower with it I just needed half a hand roll for this so I went ahead and got a raw head there is a popular belief in for in foreign countries they they consider us leaving you consider Americans to be lazy so I'm I also want to disprove that by showing us showing that our traditional food and ways of cooking in that it's actually time consuming it's not just something that's easy but you know we make chiles in eight means that take hours I want to make something like cherries in it when I come good thing about this is that my husband likes anything with vegetables lights vegetables so he'll probably most likely like this and that's why I'm making a full recipe and these I'm not cutting it down or anything because I think he will eat it it gets bacon bit I'm gonna mix them in the dressing okay vegetables are and this it when he gets half of his cheese the whole thing let me save that for another recipe because Vermont also has a lot of cheese and maple syrup yes some of the recipes will have Bologna we're going to use everything that makes us American not just because burgers make us American too what doesn't make us American it makes the food America somebody who is not American I mean it to better cheese is a very Wisconsin Wisconsin he's known for having cheddar food cheddar cheeses they had white and they have yellow they have marbled okay there is that now I'm going to go get the big image ready now chop up the bacon because this is how I make bacon bits I always cut up the bacon before I fry it because it's easier that way it fries crispier and more of the oil comes out it's good now I'm going to make the dressing it's olive oil mayonnaise first and then some other things like salt and pepper that's for one call okay I'm going to put the bacon bits in this dressing now these are for flavor and the our beef need of beef mix that around it says to put sugar in what I'm not not good to do that now what should I do I want this to be not so thick I think I'm going to put a little milk in it it's not cow milk sorry cows some of us are lactose intolerant so the cheese is low farm that were low lactose low in lactose so I I went ahead with the cheese but here we are going to use the old milk for this all right there I put a little I just eyeballed it maybe it less than 1/4 a cup maybe 2 tablespoons yeah that's better yes yes yes they just have salt and pepper and bacon bit you know this is Lana no nobody sponsors my videos I just record what I'm doing because I like to do this YUM mm-hmm that sauce is good we I mean I mean that addressing so I'm going to coat them in the dressing and I'm in the fridge for dinner and the cranberries will be for whoever wants them I do I want the cranberries so this is a beautiful salad it's Wisconsin broccoli salad you know it smells good yummy yes yes yes well I wish you could smell that smells good made with fresh ingredients look here you gonna set it in the fridge now all right now I'm going to start getting the broccoli ready I mean cauliflower I have a bag of 10 ounce bag of cauliflower and then I have half a head of fresh cauliflower so all these different color flowers hopefully should add up to two pounds which is what I need for this recipe can count as our sister dinner soup and it will go with be served beside burgers one burger per kid and here I'm going to use the white the whites of them onions and we'll chop them up a little small to in the food processor I'm just getting this ready now because I'm going to look and see what the ingredients are I haven't read them yet I read them but all I know so far is that I need two pounds of cauliflower this is just a core what's the core it's a bit tough let's not put the quarry since I have a bag of rice and a bag of florets already though there will be different textures of cauliflower in the soup that's probably not a bad thing I'm gonna course top the white and within the processor for people who are sensitive to five max I fought my foods is the green parts but these onions is least offensive so that's what the green part in the salad and brought me from reds are also low fodmap cauliflower is high but I I can make sure that my oil has more broccoli in this cauliflower I also take my what are those things go my probiotics every day I just I don't wait until I get sick i I just started thinking in everyday because I can be more stable nice my gut health is more stable when I take it every day alright so we'll give you a break while I go it's in the food processor okay now I'm going to chop the garlic first you wanna peel it I do use raw garlic for recipes and I'm going to throw that into the food processor with the onion bit so it can all be chopped up together okay that here okay awesome you own it alright I'm gonna toss that into the food processor all right now I'm putting this chopped up garlic and onion in in here what so tiny man will find a biter now I'm going to look at my recipe all right Lee it gets a tablespoon of butter thanks cows thanks Wisconsin so that will I want the onion and garlic to cook a little with the butter butter melt when I cut out the butter it will melt faster so cut it up little teeny you you smell of garlic and onion butter not so good but it's a pretty big caught so 1 1 tbsp it's not going to make it that bad and the recipe asks for half-and-half but I'm not going to use happen I'm going to use oat milk no I need the rest of this wrong I used it yesterday me and I'm going to finish it up we're going to put all of the vegetables in your week mustard helps it taste cheesy put this in and cook it a little before I add the frozen okay I'm going to add a cup of milk and a cup of cheddar jack cheese salt I heard of half teaspoon I don't know I'm gonna taste it and see if it needs more okay now I'm going to put the milk and the cheese in India just look up ugly tasks for its kind of a suit it needs more so that's probably enough to dodge a key cheese a gentleman's just here you oh thank you and the burgers are the burgers order a butter burger this constant flutter burger and I read that it was a classic and I'm just gonna cook a little seam around it's good now I'm going to season this meat because I'm using the steak seasoning it asked for salt and pepper so I'm going to use this for my salty pepper and the salt will help the meat thought faster because it's frozen okay I'm going to chop the sweet the Dahlia it goes into the butter for the butter burgers i we have never had these before but for today for this dinner that honors Wisconsin the classic food of Wisconsin that I what I was able to locate on Pinterest we are going to do it also have of course we have that broccoli salad wisconsin broccoli salad and the creamy cauliflower this constant cauliflower soup it's a neo full of vegetables even though we are having these decadent butter burgers all right I am paying attention to the fat Matt I know what which things I have to eat know a little of in which I can eat a lot of so here these onions are going to cook until they're brown in this order and then we remove the onions and the butter okay so this is how they're looking and this is the time when I take them out that's what the recipe thing when they start when they're translucent and just starting to turn brown and they said that each burger it's a lot of butter in order to be considered an authentic classic Wisconsin water burger just so interesting I've never considered doing that you made here I am gonna try it one time I did put some brown gravy mix in the further heat because I've always do that it won't keep the juices in the
